GIST (Glycemic Index Speed Test) is a rapid and efficient in-vitro method using lab starch digestibility test and NMR processing to generate input for GI data analysis. The obtained GI results have shown strong correlation between GIST method and the accredited in-vivo GI method. Hence the GIST can be used as a good prediction tool especially during the product development phase of food industries.
